Banana Cream Pie

Ingredients:

3/4 cup white sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

2 cups milk

3 egg yolks, beaten

2 tablespoons butter

1 1/4 teaspoons vanilla extract

1 (9inch) pie crust, baked

4 bananas, sliced

Directions:

1) In a saucepan, combine the sugar, flour and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 minutes and then remove from burner.

2) Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until whole thing has a smooth consistancy.

3) Slice bananas into the cooled baked pastry shell. Top with pudding mixture.

4) Bake at 350 degrees F for 12 to 15 minutes. Chill for an hour.

Easy Strawberry & Blueberry Dessert

A Red, White & Blue dessert recipe perfect for the 4th of July

Ingredients:

2 cups fresh strawberries

1 to 2 cups blueberries

1 to 2 teaspoons sugar to taste

4 small scoops of raspberry or strawberry sherbet

1/2 to 1 cup yogurt (vanilla or Boston Creme Pie) or whipped topping

Preparation:

Wash berries; hull and slice strawberries

Toss berries with sugar

In a dessert dish, put a scoop of sherbet.

Spoon strawberries and blueberries over sherbet.

Top with a few tablespoons of yogurt or whipped topping.

Repeat to make 4 to 6 servings.

Breakfast Menu

Breakfast Tropical Smoothie

Ingredients:

  • 2 cups pineapple juice
  • 2 bananas
  • 2 cups vanilla yogurt
  • 1 cup strawberrie,hulled
  • 1/4 cup wheat germ
  • 1 teaspoon vanilla extract

Cooking Instructions:

1. In a blender combine pineapple juice, bananas, and strawberries, wheat germ and vanilla extract. Blend until smooth.

 

Grits and Sausage Casserole

  • 1 pound bulk pork sausage
  • 1 cup quick-cooking grits
  • 1 pinch salt
  • 1 pinch garlic powder
  • 1 egg, lightly beaten
  • 2 cups shredded Cheddar cheese, divided

Cooking Instructions;

1. Brown the sausage in a large skillet over medium-high heat. Drain and set aside. Prepare grits according to package directions using water, not milk. As the grits thicken, stir in the salt and garlic powder.

2. Preheat oven to 350 degress. transfer the cooked grits to a 9x13-inch baking dish. Mix in the egg and 1 1/2 cups Cheddar cheese. Mix the sausage into the grits, then sprinkle the remaining 1/2 cup of Cheddar cheese over the top.

3. Bake for 30 minutes in the preheated oven, or until the cheese is melted and bubbly.

Fluffy French Toast

Ingredients:

  • 1/4 cup all-pr=urpose flour
  • 1 cup milk
  • 1 pinch salt
  • 3 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon white sugar
  • 12 thick slices of bread

Cooking instructions:

1. Measure the flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.

2. Heat a lightly oiled griddle or frying pan over medium heat.

3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

 

 

 

Egg, Potato, Bacon and Sausage Breakfast Casserole

Prep Time: 1 and 1/2 Hours
Yields: 8 Servings
Ingredients:                        


1 (16-ounce) package frozen cubed hash browns, thawed
1 roll breakfast sausage, cooked and crumbled (I used Jimmy Dean)
1 pack bacon, cooked and crumbled
1 cup shredded Cheddar cheese, divided
1 diced onion
1 diced red bell pepper
1 diced green bell pepper
2 Tablespoons minced garlic
¼ cup sliced green onions
¼ cup minced parsley
1 can rotel tomatoes (drained)
granulated garlic to taste
Salt and pepper to taste (I used Zatarain's Creole seasoning to taste)
6 eggs
1 and 1/2 cups whole milk - just wanted to make it richer!!


Method:
Preheat oven to 350 degrees F.
 
Fry bacon and crumble - set aside - Using bacon grease - saute onions, bell peppers, garlic, green onions and parsley. Cook until soft and drain on paper towels. Cook sausage until all is crumbled and well done. Add the sauteed vegetables, bacon and drained rotel tomatoes back to the pot. Mix well. 
 
In a large mixing bowl, combine hash browns and sauteed mixture -- blend (mix) well. Season to taste using salt, pepper and granulated garlic. (Zatarain's/Tony's) -- what ever you use to season things. Everything except the potatoes are cooked so you can taste it. Spoon mixture into a greased 8" x 11" ovenproof dish.
 
In a medium mixing bowl, beat eggs and milk until smooth then pour over hash brown mixture. Bake uncovered 1 hr. or until golden brown and firm. The internal temperature should read 180 to 190  degrees F. Remove casserole from oven and top with ½ cup cheese. Let rest 5 minutes before serving.
 
NOTE: Dish may be prepared in advance, covered and refrigerated overnight. Remove from refrigerator 30 minutes before baking. (That is what I did)
 
I doubled the recipe and cooked it for 1 and ½ hrs.
I added the can of rotel tomatoes - not in the original recipe.

You don't even realize that on an average day, where all you get is a fast food meal and starbucks in the morning, you've already dropped 10 dollars on horrible food. That's already 300 dollars per month - Do you get where I'm going with this?  Here are some things you NEED to pick up and start working with in your kitchen. These are basic staples that can be used to create thousands of different recipe ideas, and help you learn how to be a better cook:  Eggs Bread Oil (sunflower, vegetable) Rice Pasta Canned Beans Various spices (salt, pepper, a few others) Tomato/Pasta sauce Meat that's ON SALE Vegetables that's ON SALE  For breakfast (god forbid you wake up 5-10 minutes earlier) you can make dozens of things with eggs. Overeasies, scrambled eggs, poached eggs, 500 different omelletes, on bread, by themselves, etc.  For lunch you can make pasta, rice, chicken/turkey sandwiches, anything - And you can bring it with you to work.  For dinner, pasta and rice combined with various meats, vegetables, and spices can be combined into thousands of dinner ideas. For specific recipes simply google "chicken dish", or "cooking with rice". It isn't complicated - there are hundreds of recipes that are nearly impossible to screw up, even for virgin cooks.  Some of these meals will only cost you 50 cents when you look at the ingredients. Rice is dirty cheap and a staple around the world, yet neglected in the west. The possibilities are endless - Believe it or not you can eat well for less than 3 dollars per day. If you get a drink from starbucks in the morning, eat lunch out somewhere, then pick something up for dinner (or make a frozen meal), you're spending close to 15-20 dollars without realizing it. That's 600 dollars a month. How much can you save? You do the math. I just recently got a good friend and my sister on this plan, and they're paying their rent with the difference. Heart Healthy Veggie Penne

Keep your New Year's Resolution with this hearty meal!
Ingredients: 
3 cups sliced carrots
1 can (15oz) seasoned diced tomatoes with basil, oregano,
and garlic or 15 oz tomato sauce
8 oz dried multigrain penne pasta
2 tbs. finely shredded Parmesan cheese
Directions:
1. Cook the carrots in lightly salted boiling water in a
covered saucepan for 10 minutes or until they're
tender; drain. Use a food processor to puree both the
carrots and the tomatoes.
2. Meanwhile, cook the pasta according to the directions
on the package; drain and return to pan. Add tomato 
sauce and heat pasta through on medium. Serve with
Parmesan cheese.
Makes 4 servings. 
New Year's Day (Gone All Afternoon) Stew
Ingredients:
3 lb chuck, cubes
1 can Campbell's Tomato Soup
1 soup can water
1 pkg. Au Jus gravy mix, or beef bouillon
1 tsp salt
2 onions, sliced
3 gloves garlic, minced
3 potatoes, quartered
3 carrots, peeled and sliced
3 stalks of celery. 1/4"slices
1 green pepper 
Directions:
Combine ingredients in a 5 quart Crock Pot and cook 5
hours on medium or if using a Dutch oven at 275 degrees.
During final hour of cooking, mix cornstarch with some of
the juice in separate dishand add to pot to thicken.
